What Cuts of Beef Are Best for Beef Tips in Gravy?

You can make very lean or tough cuts of beef tender with an Instant Pot pressure cooker or a slow cooker. So for this beef tips with gravy recipe, you can use lean chuck roast, sirloin tip, eye of round, or your preferred cut of lean beef.

  • Chuck Roast is an inexpensive cut of meat that's often on sale. It has some marbling for flavor, and it's flat, which makes it easy to brown.
  • Sirloin Tip (or round tip) is cut from the hindquarters, next to the sirloin. A sirloin tip has lots of flavor.
  • Eye of Round comes from the rear leg. It's lean and tough but really flavorful.

This recipe uses Gravy Master, which enhances the natural flavors and appearance of gravies, meats, stews, fish, poultry, and vegetables. It isn't super common, but Gravy Master helps add a little something to this recipe.

Beef tips and gravy is the perfect make-ahead meal for busy weeknights, and it makes great leftovers! Simply keep in the refrigerator in an airtight container until you are ready to reheat. Freshen the flavor with just a dash of salt and pepper and reheat on the stovetop or in the microwave.

Ingredients

Here's a list of what you need:

  • Lean chuck roast
  • All-purpose flour
  • Salt
  • Black pepper
  • Beef stock
  • Vegetable oil
  • Gravy Master
  • Onions
  • Noodles or rice for serving

How to Make Tender Beef Tips and Gravy

  1. Cut, season, and flour the beef:
    1. Combine flour, salt, and pepper in a small bowl.
    2. Cut and trim roast into small bite-sized pieces.
    3. Dredge beef pieces in seasoned flour shake off excess flour.
  2. Instant Pot Directions:
    1. Set the Instant Pot to sauté and add oil.
    2. When the oil has heated drop in several pieces of the beef. Do not add all the beef at once.
    3. Cook seasoned beef in batches on all sides until lightly browned.
    4. When all of the beef is cooked, add it back to the Instant Pot.
    5. Add onion, Gravy Master, and beef stock.
    6. Place lid on Instant Pot and cook on high pressure for 15 minutes. Release pot after cooking with either a quick release or a natural release.
  3. Slow Cooker Directions:
    1. Brown the seasoned floured beef in a large skillet in small batches with some vegetable oil.

    3. Add onion, Gravy Master, and beef stock.

    4. Simmer for 4 to 6 hours on low.
    5. If the liquid hasn't thickened up to your desired consistency, you can thicken it up by mixing 1 tablespoon of butter and 1 tablespoon of flour. Stir this into the gravy and it will thicken up.

Serve beef tips and gravy over rice or noodles for a hearty meal.

  • Brown the beef in a large skillet in small batches with some vegetable oil. Add the browned beef, beef broth, onion, and Gravy Master to the slow cooker. Cook for 4 to 6 hours on low.

  • If the liquid hasn't thickened up to your desired consistency, you can thicken it up by mixing 1 tablespoon of butter and one tablespoon of flour together. Stir this into the liquid and it will thicken up the gravy in the slow cooker.

Serving

  • Prepare noodles or rice according to package instructions.

  • Serve beef tips and gravy over noodles or rice.
